Gluten-Free Strawberry Glazed Chicken Wings

On Wednesday, Janet and I went to the Mall and walked around.
We were trying to get her contractions down to 10 to 15 minutes.
When we did , we went to the hospital only to be told : come back when it is 2 to 3 minutes apart!
So on Thursday, Janet and Chris was like , we'll just wait till the baby is ready.
They came over about 4pm and I started cooking.
I thought I would make Dr.Pepper Cupcakes.

Janet loves to drink Dr.Pepper before she was pregnant, but since she had stopped drinking any kind of sodas. 
For dinner, I thought I would make some Strewberry Glazed Chicken Wings. Another favorite of Janet and Takasha ( my daughter-in-law)

So the water broke while I was cooking all her favorite foods and I did not get to take pictures to post  like I wanted.
But this is  super easy

Ingredients
5 pounds chicken wings
1/2 cup Liquid Aminos
1/4 cup strawberry jam

Put all the chicken wings in a large oven tray and cover with foil.
put in a oven @ 350 for 1 hour
In the meantime mix the liquid aminos and strawberry jam together
After the hour , pull the tray out and take foil off, and pour the mixture over the chicken wings and toss lightly to be sure all the wings are cover.
Put back in oven for 15 minutes , take tray out after 15 minutes and turn the wings over onto the other side.
put back in the oven for another 15 minutes
And it is ready!!!!

Gluten-Free Peach Coffee Cake with Streusel Topping

Gluten-Free Peach Coffee Cake with Streusel Topping
At church this Sunday I was giving some fresh peaches to take home.
Today being Tuesday and the peaches was already ripe and ready to eat when we got them.
I needed to use them right away.
So, as I was looking through my Everything gluten free page ,I came across this recipe

 Gluten-Free Peach Coffee Cake with Streusel Topping

DRY INGREDIENTS:
1 cup brown rice flour

3/4 cup almond meal

1 cup  brown sugar

1/2 cup tapioca

2 teaspoons baking powder

1 teaspoon xanthan gum

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg




put all the dry ingredients
 in a large bowl







mix to combine








WET INGREDIENTS:
2 large  eggs, beaten
1/4 cup  oil


2 teaspoons  vanilla extract
1 teaspoon almond extract

1/4 cup milk

mix eggs,oil,extract and milk together

Add the wet mixture to the dry ingredients

mix well

about 1 1/2 cup diced fresh peaches
I like to make cupcake sizes coffee cakes.                
And I can make 12 peach coffee cakes with this.                         
line cupcake pan with cupcake pappers.
Fill each cup 1/3 with batter.
Scoop 1Tablespoon full of the fresh diced peaches
into each cup.
Top with the remaining batter, even them out.






STREUSEL TOPPING
2 tablespoons chopped nuts

3 tablespoons  oil







1/3 cup brown sugar
3 tablespoons brown rice flour
1 teaspoon ground cinnamon
make the streusel topping by combining
the brown sugar,brown rice flour,
oil, chopped nuts and cinnamon.
mix until sandy

spread the streusel toppings
on the cupcakes
about 1 Tbs each.







Bake in a preheated oven for 40 minutes
after 25 minutes cover the top of cupcakes
 loosely  with foil
to prevent it from over browning

Gluten Free Bread Using The Breadmaker

Since I having been getting a lots of Udi's Breads,and some of Rudi's, I have not make any bread at home. So when Janet ask me if the Udi's breads have show up at the house on Friday. I was like: what?!
there is no more bread at the house? YOU ate it ALL!!
Sure, she is eating for two. And she IS always hungry. AND the baby is due anytime.
But the Doctor did tell her to stay off the bread.
AND like her mother,she doesn't listen very well...LOL
SO....out comes my bread making stuffs
and my bread machine!
WET INGREDIENTS:
3 eggs
1 1/2 cups warm water
1/4 cup oil
DRY INGREDIENTS :
1 1/4 cup white rice flour
1 cup potato starch
1/2 cup tapioca starch
3/4 cup bean flour
2 1/4 yeast
2 Tbsp sugar

1 Tbsp xanthan gum
1 /12 tsp salt


DIRECTIONS :


   
put all the dry ingredients into a large bowl

mix thoroughly
mix the 3 liquid ingredients together in the bread maker

use the short or quick cycle
to make the bread
pour the dry mix over the wet
in the breadmaker

looking good
let the machine
do all the work for you!

The house smelled so good and the bread took only 2 hours
I still have time to go to the baseball game


they lost but it was still fun!!
