Gluten-Free Apple Pie

So after I had made the Pecan pie,I thought I would make a Apple Pie.
When I had ask what kind of pies they (Jim and Chris) would want me to make.
Jim asked for the Pecan pie and Chris asked for Apple pie.


This time I decided to be Semi home made Kwei-Mei  hehehehehe
I started out with a pre-made gluten free pie shell

1 (9 inch) unbaked pie crust

1 apple sliced
and you don't see the can but it is 1 can apple pie filling
oh yea, I got lazy!

I cover it tin foil so it won't get burned
Put the pie in a preheated oven (350 degrees)
bake covered for 30 minutes
In the mean time melt 1/4 cup of butter and add to it 1/8cup of corn syrup
and 1/4 cup of gluten free flour mix
the mixture will be sticky
spread it over the top of the pie and put it back into the oven for another 15 minutes
It turned out pretty good

as I am posting this both pies are half gone!!!

Once in a while I like to make sure to give my family a really special treat. Most of the time those treats are just boxes of chocolate candy. But I thought that this time I would do something extra special for everyone. Our daughter Lily was just told that she's gluten intolerant, so I decided to make something this weekend for all of us that she would be able to enjoy too.

I went online to figure out something that would be nice for a Sunday morning breakfast. While I was looking online through recipes, I actually came across some get.wildblue.com/ and when I looked through them a little bit, I ordered one of them for our household.

I decided on fixing some gluten free crepes and I think that they were a really big hit. I also set up a little assembly line of toppings so that everyone could figure out what they wanted on their crepes.

Gluten Free Pecan Pie

So today I made a Gluten Free Pecan Pie for Jim.
He has not have a pecan pie for over a year!
the last time was when Sandy (Chris's mom) made it for Thanksgiving.
And I have not bake one for atleast 4 years.
I was in the living room when I heard this:  OH... OH...
I'm like, WHAT! what's wrong???/
Jim: this is good this pecan pie is good!!!!
YEA>>>>
preheat oven to 350 degrees

INGREDIENTS:
1 (9 inch) unbaked gluten free pie crust


1/4 cup (or 1/2 stick) butter,melted


3 eggs, beaten

1 cup dark corn syrup


1 cup white sugar

1 teaspoon gf vanilla


mix vanilla,sugar

3 beaten eggs

and 1 cup dark corn syrup
mix well

line buttom of pie crust with pecans

pour mixture over the pecan lined pie shell

put in preheated oven
and bake for 1 hour
or until knife inserted comed out cleam



Allow to cool

sliced and serve with or without whipcream!

Warm Goat Cheese and Pear Salad

Ingredients:
1 10-oz bag of fresh spinach leaves
place in large bowl
1 fresh pear sliced and cubed


1 small red onion,halved and sliced thin

1/2 cup pecans

1 7oz package goat cheese,crumbled
8 Tablespoons oil
stir 4Tbs oil and balsamic vinegar
togather
1/4 cup balsamic vinegar


Directions:

Heat 4 Tbs oil in large skellet over high heat.
Add red onion and saute until brown and softened
about 7 minutes

Stir in the pear and pecans


Add to spinach in bowl


add goat cheese

pour in oil and vinegar mixture
toss to coat and wilt slightly


enjoy!!!!   yum






Gluten-Free pull-pork

When I got home last night,after being gone for 10 days, I need to make something good and easy for dinner tonight.
Pull-pork is always easy when made in a crockpot!
So I pull out the crockpot and put in 2 porkroasts!
Add some seasonings and this morning I open the crockpot lid and shredded the pork!
yum, ready to go!

 we pick that up on our way home yesterday!

I thought they would have lots of choices in the bakery,
But as you can see from the picture--there is a lot
but I was expecting more :( 
their flyer listed over 15 different item.

I did not see any cupcakes :(   bummer!
But I was happy to get the Pie crusts

we also got 1 baby angel food cake - size of a cupcake- ate that right away!
Should have got more!!!!

Gluten Free Friendly Restaurant in Oceanside,CA

 Los Tacos

When our co-worker,Erick told us he just had a HUGE Burritos at a taco shop not far from where we were working. Jim and I just had to go check it out.
Sure glad we did!

The 1st visit we ordered the special:
5 Tacos for $5.50
not a bad deal! 
don't you agree?


 We love it so much we went back again on Sunday
Jim did not get sick from any flour cross-contamination 
so we know it was safe for him!
