Apple Carrot Muffin |
We are going to be working nights this week.
I needed to have something ready to eat in the morning for Jim.
So I thought this Apple Carrot Muffins would be just right!
INGREDIENTS:
1 cup rice flour 4 eggs beaten
1/2 cup bean flour 1/2 cup oil
1 1/4 cup sugar 2 tsp vanilla
1 1/2 tsp cinnamon 2 cups grated carrot
1 tsp baking soda 1 cup shredded apple
2 1/2 tsp baking powder 1/2 cup raisins
1/2 tsp salt 1/2 cup chopped walnuts
1/3 cup shredded coconut
preheat the oven to 350

In a large bowl put
1cup rice flour
1/2 cup bean flour |
|
add 1 1/4 cup sugar |
|
1 tsp baking soda |
|
2 1/2 tsp baking powder |
|
1/2 tsp salt |
|
1 1/2 tsp cinnamon |
Mix togather all the dry ingredients
In another Bowl put
|
4 eggs, beaten |
|
1/2 cup oil |
|
2 tsp vianilla |
|
2 cups grated carrots |
|
1 cup shredded apple |
|
1/2 cup chopped walnuts |
|
1/2 cup raisins |
|
1/3 cup shredded coconuts |
|
mix well |
|
Add the wet mixture to the dry ingredients |
|
and mix until thoroughly combined |
|
fill greased muffin tins 3/4 full |
|
bake for 20 to 25 minutes |
enjoy with a cup of coffee,tea or milk!!!
