 Gluten Free Asian Green Onion Pancake
3 cups GF flour
1 cup very warm water
1 tsp salt
1 cup chopped/sliced thin green onions
1 tsp salt




put the 3 cups flour and 1tsp salt in a mixer
Turn mixer on and slowly add the cup of very warm water to it

Basic dough

For each pancake: pinch off about 1/4 cup size dough

put on the flour tortilla press

tortilla press

press!!!!!between 2 clear sheets 
Mix the chopped onions with the salt in a bowl
peal top sheet off and add 1tsp of chopped onions  

roll into a log

fold into a circle 

and press in the tortilla press



pan fry in a skillet with a little oil ( both side)

enjoy!!

Gluten Free Chocolate Brownies

Here is a brownie recipe that calls for chocolate chunks not coco!

Ingredients:
5oz  melted chocolate
1/2 cup butter
2 eggs
1 cup brow sugar
1 tsp vanilla
1/2 cup almond meal
1/4 cup sweet rice flour
1/2 tsp salt
1/4 tsp backing power
1 cup chop nuts

add all the dry ingredients to a bowl and mix together
Melt chocolate and add butter.
Stir until smooth

Add eggs and vanilla to dry mix and stir well
Add cho/butter to the flour/eggs mixture and stir through.
Spoon mixture into a backing tray 8x8
Place into a preheated 350 oven for 35 minutes

Gluten-Free Apple Carrot Muffins

Apple Carrot Muffin

We are going to be working nights this week.
I needed to have something ready to eat in the morning for Jim.
So I thought this Apple Carrot Muffins would be just  right!

INGREDIENTS:
1        cup   rice flour                                           4   eggs beaten                            
1/2     cup   bean flour                                         1/2 cup    oil
1 1/4  cup   sugar                                                 2 tsp         vanilla   
1 1/2  tsp   cinnamon                                           2 cups      grated carrot 
1        tsp   baking soda                                       1 cup      shredded apple
2 1/2  tsp   baking powder                                  1/2 cup      raisins
 1/2    tsp   salt                                                    1/2 cup     chopped walnuts
                                                                           1/3 cup      shredded coconut
preheat the oven to 350
In a large bowl put
1cup rice flour
1/2 cup bean flour
add 1 1/4 cup sugar

1 tsp baking soda

2 1/2 tsp baking powder

1/2 tsp salt

1 1/2 tsp cinnamon
Mix togather all the dry ingredients

In another Bowl put
4 eggs, beaten

1/2 cup oil

2 tsp vianilla

2 cups grated carrots

1 cup shredded apple

1/2 cup chopped walnuts

1/2 cup raisins

1/3 cup shredded coconuts

mix well

Add the wet mixture to the dry ingredients

and mix until thoroughly combined

fill greased muffin tins 3/4 full

bake  for 20 to 25 minutes



enjoy with a cup of coffee,tea or milk!!!
