The Best G/F Cinnamon Rolls


Ingredients

dough

  • 2 1/4 teaspoons active dry yeast use rapid rise (*see notes below)
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 1 cup buttermilk warm temperature
  • 1 egg
  • 1/3 cup canola oil or vegetable oil
  • 3 1/2 cups G/F flour ( I use Bob's 1 to1)

filling

  • 1/2 cup butter melted
  • 1 1/4 cups packed light brown sugar
  • 2 1/2 tablespoons ground cinnamon
  • 2 Tablespoons G/F flour

    Make the Dough

     


     in a bowl- mix flour,sugar,salt,yeast together.
    in the mixing bowl mix warm buttermilk,oil then egg well. add the dry mixture and mix  and
    When the dough is tacky but not sticky enough to stick to your hands , it's perfect.
    Spread  plastic wrap on counter and roll dough out to be a 20x30 rectangle or some where near
    that.  Spread melted butter over dough. Spread brown sugar mixed with ground cinnamon.
     Roll the dough up into a tight log.
    Place onto a greased pans.  9x13, or 8x8 . Cover pans with plastic wrap and dish towels.
     Let rolls rise 1-2 hours or until they are touching and have risen almost double.
      Bake in a preheated 350 degree for 20 to 30 minutes.





     Once rolls have been removed from the oven, frost using half the amount of frosting. Then after they have cooled a few more minutes, frost again with remaining frosting. The first frosting will melt down into the rolls and the second layer should stay put. Serve warm.

Apple Cake

So I have been wanting some apple cake.
Last time I made this cake ( in a cake pan) it was very good, but I want more of the outer edges.
So, I made them into cupcakes. Much much better! We can eat some and put some in the freezer for later.
This time I use the muffin top pans  and the little muffin bunt pans.


This apple cake is so moist and Super easy to make

                                                                 APPLE CAKE

preheat oven to 350
2 eggs
1 3/4c sugar
2 tsps cinnamon
2 tsps baking soda
1/2 cup oil

In a large mixing bowl, mix the above ingredients together.

6 med Apples of your choice (Gala, Fuji, etc) Peel sliced and chop coarsely.
2 cups of Gluten Free Flour ( I use Bob's Cup for Cup)

Add the chopped Apples and the 2 cups of flour into the WET Ingredients.
mix well.

Pour into baking pans of your choice. every oven is different
Cake pan=======55 minutes +/-  check after 45 min.
 Cupcake=======25 -30 minutes ck at 20 min
Muffin top ======20 minutes   ck at 15 min

 Gluten Free Asian Green Onion Pancake
3 cups GF flour
1 cup very warm water
1 tsp salt
1 cup chopped/sliced thin green onions
1 tsp salt




put the 3 cups flour and 1tsp salt in a mixer
Turn mixer on and slowly add the cup of very warm water to it

Basic dough

For each pancake: pinch off about 1/4 cup size dough

put on the flour tortilla press

tortilla press

press!!!!!between 2 clear sheets 
Mix the chopped onions with the salt in a bowl
peal top sheet off and add 1tsp of chopped onions  

roll into a log

fold into a circle 

and press in the tortilla press



pan fry in a skillet with a little oil ( both side)

enjoy!!

M&M COOKIES

                                                                                                                                                                                                                                                          

      M&M cookies                                                                                                                                                                                                                                                                    
  • 3 cups Gluten Free Please!all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp baking powder 
  • 1 cup (2 sticks) unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 1 cups (about 12 ounces)M&M
  •                                                                 
  •   Preheat oven to 350 degrees. In a small bowl, whisk together the GFP!flour, baking powder and baking soda; set aside. In the bowl of an electric mixer fitted with the paddle attachment, combine the butter with both sugars; beat on medium speed until light and fluffy. add  vanilla, and eggs. Beat until well mixed, about 1 minute. Add flour mixture; mix until just combined. Stir in the M&M.
  • Drop heaping tablespoon-size balls of dough about 2 inches apart on baking sheets lined with parchment paper.
  •  Bake until cookies are golden around the edges, but still soft in the center, 12 to 15 minutes. Remove from oven, and let cool on baking sheet 1 to Bake until cookies are golden around the edges, but still soft in the center, 8 to 10 minutes.

Gluten Free Chocolate Brownies

Here is a brownie recipe that calls for chocolate chunks not coco!

Ingredients:
5oz  melted chocolate
1/2 cup butter
2 eggs
1 cup brow sugar
1 tsp vanilla
1/2 cup almond meal
1/4 cup sweet rice flour
1/2 tsp salt
1/4 tsp backing power
1 cup chop nuts

add all the dry ingredients to a bowl and mix together
Melt chocolate and add butter.
Stir until smooth

Add eggs and vanilla to dry mix and stir well
Add cho/butter to the flour/eggs mixture and stir through.
Spoon mixture into a backing tray 8x8
Place into a preheated 350 oven for 35 minutes

My daughter love the pizza from Steve's Pizza.
Every time she is in the Sacramento area she would always try to fine the nearest  Steve's Pizza.
Now that Joe and TK have moved to the Sacramento area, she found

A Baby Shower Where All The Food Are Gluten-Free


We had a Baby Shower for Janet Today!!!

Love the decorations Corinne came up with!

She comes up with some great ideas!

And the diaper cake!



We served  lots of fruits: watermelons,

grapes, cherries mangoes and strawberries.

Gluten free meatballs:

2 pounds ground turkey
1 pound sausage1 pound ground beef

1 1/2 cup of gluten-free bread crumbs 
1 tablespoon season salt1/4 cup gluten-free soy-sauce



Put everything in a large bowl and mix well
 made into 1in round meatballs

and place them on cookie sheets
 put in oven that is preheated at 350

bake for 25 minutes

put them into a crock-pot and turn the crock pot on warm
serve and enjoy
                                                                    

 mini hot-dog links

1 can of whole cranberry sauce

1 cup of catchup

2 pound of the mini hot-dog links

put it all in a crock-pot

turn crock-pot to medium for an hour
