Ingredients
- 1 cup salted butter, softened
- 1/3 cup sugar
- 1 teaspoon vanilla extract
- 2 cups Gluten Free flour
- 1 cup finely chopped walnuts
- Powdered sugar for rolling cookies twice - about 11/2 cup
Instructions
In a stand mixer, cream butter and sugar together until light and fluffy.
Add vanilla and flour and mix until just combined.
Add chopped pecans. beating at low speed, scraping
bowl as necessary, until well mixed.
Roll
dough into 2 tablespoon sized dough balls.
Roll them in powder sugar
Place on prepared cookie
sheet about 2 inches apart. Repeat until all the dough is used up. Bake
cookies for 12 - 14 minutes until bottoms are just slightly brown,
Remove from oven and cool on baking pan for about 2 minutes
While cookies are still warm, roll them in powder sugar again.
roll them in icing sugar
Place on prepared cookie
sheet about 2 inches apart. Repeat until all the dough is used up. Bake
