Banana/chocolate chips Muffins



The other day Jim asked me to make him some banana muffins. So i found this recipe by Nicole Hiebert in Keepers at Home Gluten-Free Cooking.
the first batch I made them with just Banana .
The 2nd time I added Chocolate chips to half of the recipe. He like it much better.
Last week he asked for them again. He wanted to take them with him to work.
so here is the recipe.
Dry Ingredients:
1 3/4      cup GF Flour Mix*                            Wet ingredients
1 tsp.     xanthan gum                                        1/2 cup   butter
1 tsp.     baking soda                                        1/2 cup   honey
1/2 tsp.  baking powder                                   3 eggs
1/2 tsp.  salt                                                         1 cup banana
3/4 cup chocolate chips


Cream butter and honey together. Beat in eggs,one at a time,beating until smooth. Add mashed banana and blend in. In second bowl,stir dry ingredients together. Add to wet and stir well. Fill greased muffin tins and bake in preheated 400 oven for about 18-20 minutes.


*Nicole Hiebert's GF Flour Mix
6 cups brown rice flour
3 cups tapioca flour
Sift together and store in a dry,dark place.
