Gluten Free chocolate Chip Cookies
I got this recipe from Gluten Free Lifestyle with Katie Ross
Mine didn't turn out like hers, I am not sure what castor sugar is,but here it is
Ingredients:
1 cup butter
1 cup castor sugar
2 eggs
3 cups sweet rice flour
1 cup potato starch
1 tsp vanilla essence
1 cup chocolate chips
Sift flours in to a bowl
In another bowl cream butter and sugar
add eggs to the butter/sugar
add vanilla to the wet mix
add flour to the butter /sugar mix
add the chocolate chips
mix well
scoop into balls and put on cookie sheet
bake at 350 for 20 minutes

Gluten Free Chocolate Brownies
Here is a brownie recipe that calls for chocolate chunks not coco!

5oz melted chocolate
1/2 cup butter
2 eggs
1 cup brow sugar
1 tsp vanilla
1/2 cup almond meal
1/4 cup sweet rice flour
1/2 tsp salt
1/4 tsp backing power
1 cup chop nuts
add all the dry ingredients to a bowl and mix together
Melt chocolate and add butter.
Stir until smooth
Add eggs and vanilla to dry mix and stir well
Add cho/butter to the flour/eggs mixture and stir through.
Spoon mixture into a backing tray 8x8
Place into a preheated 350 oven for 35 minutes

Gluten Free Pan de Quso ~ Cheese Bread

this is another cheese bread. It is from brazilcook.com.
Ingredients:
1/2 cup water
1/2 cup milk
1/4 cup oil
1/2 tsp salt
1 cup tapioca flour
1 egg
1 cup grated Parmesan cheese
1. bring to boil in a big pan the water,milk,oil and salt.
2. Remove the pan from heat and add tapioca starch.
Mix well with a wooden spoon and let it cool down.
3. Put the mixture in a bowl, add the eggs and knead well.
4. Add the cheese and keep kneading until the dough is smooth.
5. Roll into small balls.
6. Place the balls onto a greased baking sheet.
7. back the cheese balls in oven heated to 350 for about 20 minutes.
put the cheese rolls on a dish and serve them warm!!

Gluten Free Chocolate Mayonnaise CupCakes With Brown Sugar Frosting
Janet has been asking me to make some Mayo cupcakes.
I have been trying out differdnt recipes.
Some are still too dry.
Some are too much mayonnaise.
I think I get it now!
Dry Ingredients
2 cups gluten free flour
1 cup sugar
3/4 cup natural cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1/4 tsp salt
Wet Ingredients
1 cup mayonnaise (not low-fat)
2 teaspoons pure vanilla extract

Gluten-Free Strawberry Glazed Chicken Wings
On Wednesday, Janet and I went to the Mall and walked around.
We were trying to get her contractions down to 10 to 15 minutes.
When we did , we went to the hospital only to be told : come back when it is 2 to 3 minutes apart!
So on Thursday, Janet and Chris was like , we'll just wait till the baby is ready.
They came over about 4pm and I started cooking.
I thought I would make Dr.Pepper Cupcakes.
Janet loves to drink Dr.Pepper before she was pregnant, but since she had stopped drinking any kind of sodas.
For dinner, I thought I would make some Strewberry Glazed Chicken Wings. Another favorite of Janet and Takasha ( my daughter-in-law)
So the water broke while I was cooking all her favorite foods and I did not get to take pictures to post like I wanted.
But this is super easy
Ingredients
5 pounds chicken wings
1/2 cup Liquid Aminos
1/4 cup strawberry jam
Put all the chicken wings in a large oven tray and cover with foil.
put in a oven @ 350 for 1 hour
In the meantime mix the liquid aminos and strawberry jam together
After the hour , pull the tray out and take foil off, and pour the mixture over the chicken wings and toss lightly to be sure all the wings are cover.
Put back in oven for 15 minutes , take tray out after 15 minutes and turn the wings over onto the other side.
put back in the oven for another 15 minutes
And it is ready!!!!
At the last minute we have our dinne at the hospital cafe while we wait for our new baby!! AND..... here he is!!!!

Today being Tuesday and the peaches was already ripe and ready to eat when we got them.
I needed to use them right away.
So, as I was looking through my Everything gluten free page ,I came across this recipe

Gluten-Free Peach Coffee Cake with Streusel Topping
DRY INGREDIENTS:
1 cup brown rice flour |
3/4 cup almond meal |
1 cup brown sugar |
1/2 cup tapioca |
2 teaspoons baking powder |
1 teaspoon xanthan gum |
1 teaspoon ground cinnamon |
1/4 teaspoon nutmeg |
put all the dry ingredients in a large bowl |
mix to combine |
WET INGREDIENTS:
2 large eggs, beaten |
1/4 cup oil |
2 teaspoons vanilla extract 1 teaspoon almond extract |
1/4 cup milk |
mix eggs,oil,extract and milk together |
Add the wet mixture to the dry ingredients
mix well |
about 1 1/2 cup diced fresh peaches |
And I can make 12 peach coffee cakes with this.
line cupcake pan with cupcake pappers.
Fill each cup 1/3 with batter.
Scoop 1Tablespoon full of the fresh diced peaches
into each cup.
Top with the remaining batter, even them out.
STREUSEL TOPPING
2 tablespoons chopped nuts |
3 tablespoons oil |
1/3 cup brown sugar 3 tablespoons brown rice flour 1 teaspoon ground cinnamon |
make the streusel topping by combining the brown sugar,brown rice flour, oil, chopped nuts and cinnamon. mix until sandy |
